  • 1 Cali’flour Crust (Italian)
  • 2 T goat cheese (or other soft cheese)
  • 3 eggs (prepared sunny side up)
  • 1 c fresh spinach
  • ¼ c peas
  • Olive oil
  • Kosher salt and pepper
Prepare Pizza Crust:
Pre-bake the Cali’flour Crust as instructed in an oven at 375-400 on a vented pizza pan, pizza screen, or on a non-stick cookie sheet lined with parchment paper for 12-14 minutes. Remove from oven and let rest a minimum of 10 minutes.

Prepare Toppings:
On stop top, warm ½ t of olive oil and quickly saute spinach (1 min). Add peas to heat through. Remove from heat. Prepare eggs; set aside.

Assemble Pizza:
On prepared crust,  evenly spread cheese to the edge. Add spinach and peas then top with eggs. Salt and pepper to taste.
Serve and enjoy!
