- 1 Cali’flour Foods Pizza Crust
- 2 medium-sized beets, sliced into ¼" rounds
- 1 c curly kale, stems removed and torn into bite-size pieces
- Juice of ½ lemon
- ½ c bleu cheese crumbles
- ¼ c grated Parmesan cheese
- ¼ c crushed walnuts
- salt and pepper
- 1-2 T Olive Oil
Prepare Pizza Crust:
Pre-bake the Cali’flour Crust as instructed in an oven at 375-400 on a vented pizza pan, pizza screen, or on a non-stick cookie sheet lined with parchment paper for 12-14 minutes. Remove from oven and let rest for a minimum of 10 minutes.
Toss sliced beets in olive oil, salt, and pepper and place on a baking tray lined with parchment paper. Roast in oven at 400, turning beets over halfway through cooking time. Cook until fork tender (about 10-15 minutes). Remove from oven. Toss kale with lemon juice and 1 teaspoon of olive oil.
On prepared crust, top with kale, beets, cheeses, and walnuts. Return to oven on high broil to melt cheeses (2-5 minutes) Remove and let rest. Serve and enjoy!
