- ½ Original Italian Cali’flour Crust, pre-baked and pulsed into crumbs
- 1 ½ lbs ground turkey or beef
- 2 eggs, beaten
- ¾ c milk
- ½ c onion, chopped
- 2 t dried parsley or 2 T fresh parsley
- 1 t salt
- ⅛ t pepper
- ¼ c ketchup
- 1 t dry mustard
Garnish: Shredded cheese and herbs (optional)
Preheat oven to 350. In a mixing bowl combine all ingredients together. Place in sprayed cups of a muffin tin or on baking tray. For a muffin tin bake for 20 minutes; oblong loaf bake 55-60 minutes; for a ring loaf bake 50 minutes. (In case of dripping during baking, place tray under muffin pan.) Remove from oven and top with glaze, then return to oven for approximately 10 minutes. Remove from oven and garnish if desired. Serve and enjoy!
*For lower carb option: use sugar-free ketchup for glaze.
Yields: 12 muffin cups
