It happens every year. There’s no possible way to make exactly the right amount of food, so it’s best to make more than enough. You can always save it, or give it away. Even still, it lingers, lonely and beckoning in little plastic containers just waiting for the day of release.

Sandwiches are almost always the go-to leftover meal. It’s easy, quick, tasty, etc. But it’s bread. Whether it’s gluten free or glutin-y, it’s still extra starch on top of the festivities of the previous day. So maybe the better question is, how can we utilize the leftovers in a healthy way?
